About Maappillai Samba Rice
Maappillai Samba is a heritage red rice from Tamil Nadu, traditionally linked to strength and stamina:

Name comes from the folklore that this rice was fed to the bridegroom (mappillai) to give him strength to lift the ceremonial stone before marriage.

How to Use (Simple Steps)
For Puttu (Red Puttu)

Take required mix in a bowl.

Add hot water gradually and mix to a crumbly, sand-like texture.

Add a pinch of salt; mix well.

Layer with grated coconut in a puttu kutti (or use an idli plate method).

Steam for 5–10 minutes.

Serve hot with kadala curry, stew, or sambar.
For Kolukattai / Kozhukattai

Mix flour with hot water and a pinch of salt to form a soft, pliable dough.

Pinch small portions, flatten, and fill with sweet (jaggery–coconut) or savory stuffing.

Shape into rounds or half-moons.

Steam for 8–10 minutes.

Serve warm as breakfast or evening snack.
For Idiyappam (Red Rice String Hoppers)

Mix flour with boiling water and salt to a smooth, non-sticky dough.

While still warm, load into an idiyappam press.

Press in spiral layers onto greased idli/idiyappam plates.

Sprinkle grated coconut (optional).

Steam for 5–7 minutes.

Serve hot with stew, kurma, or coconut milk
