Karum Kuruvai is an indigenous rice variety recognisable by its darker bran layer and hearty bite. By making this the main grain in idli batter, you get steamed cakes and griddled dosas that are naturally higher in fibre and everyday nutrients compared to polished white‑rice idlis.
The batter is formulated to mimic home‑style ratios seen in Tamil households: enough urad dal for fluffiness, a touch of fenugreek for digestion and fermentation, Karum Kuruvai as the core grain, and a small amount of poha to keep the idli soft without compromising texture.
